I swear, they would eat pasta every night of the week if I weren't around to veto their dinner ideas. Haluski is egg noodles tossed with sauteed cabbage, onions, and butter. It is one of those dishes that I rarely make myself, mainly because my mom does it well. I won't make pierogies myself either because that is another dish my mom makes with fried onions on top.

  2. Set your frying pan on a high burner to preheat Add the oil, and wait til smokepoint.. Get your water boiling for the noodles, add the salt to the water. When oil is hot, add all of the cabbage to the pan. When water boils, add your Kluski noodles to the pot.
  3. Keep tossing the cabbage in the pan with some kitchen tongs. Keep turning it over on itself and frying on high heat. It will reduce in volume dramatically and start to brown and caramelize. It may smell like it is burning. This is Good! The darker the better. Makes for sweet, buttery, flavorful haluski.
  4. Drain the excess oil from the cabbage and remove to a bowl. Yes, that is all that I got from a whole head of cabbage- told you it would reduce dramatically. Drain your kluski noodles and hot butter your noodles. Serve the fried cabbage over the noodles with a smoked Polska Kielbasa.

Haluski is a pan fried dish that both of my grandmothers used to make of butter, onion, cabbage and noodles. It makes a delicious main or side dish, whatever you're in the mood for. I personally like to let my cabbage get a little brown, but adjust your cooktime as necessary to your preference. Haluski is basically pan fried noodles and cabbage, lovingly sauteed in a butter bath. Bacon or kielbasa are optional ingredients to add some meat to the dish, and extra savory flavor.
