  1. Prepare chinese sausage (lap cheong)
  2. Prepare preserved meat
  3. Get waxed preserved duck drumstick
  4. Make ready light soy sauce
  5. Prepare sesame oil
  6. Get rice with 4 and a half cups of water

Assorted waxed meat (waxed sausages, waxed liver sausages, waxed duck drumsticks). Cut the waxed duck into bite size and the waxed sausages into small chunks, set aside. With waxed meat, rice and a pot, you are good to go. I may just make some this coming CNY.

Instructions to make Waxed Meat Rice / Lap Mei Fan:
  1. Under the tap running water, slowly peel the skin to Remove casing of the the Chinese sausage (lap cheong)
  2. Quick blanch waxed meat
  3. Bring a pot of water to a boil then quick blanch all meat for 1 minute then drain
  4. Steam all the meat for a minimum 20 minutes then add in the light soy sauce and continue to steam for another 10 minutes
  5. Wash rice grain till water are clear about 3 times then add water then bring it to a boil first in the rice cooker then starting to dry up (half way thru cooking) then add in all the meat continue cooking till its done
  6. Removed meat then thinly slice all meat then add onto rice cooker with light soy sauce and and vegetable then bake for another 10 minute
  7. Removed vegetable then Add sesame oil and mix well then bake for another 5 minute
  8. Fluff up rice and serve

The best waxed meat comes from HK: goose liver, pork sausage, waxed duck. As for the waxed duck, get the variety which is less salty.
